How to store carrots in the fridge or freezer

Although today they can be found all year round, carrots are a typically summer vegetable, which reaches its maximum splendor in August.

They are rich in benefits : they are good for the eyes due to the high content of vitamin A, they improve the tan thanks to beta-carotene and they are an excellent source of vitamin C. In short, carrots should be added to the usual diet.

How to store carrots for a few days

There are those who choose the pantry and those who opt for the refrigerator. Where is the truth? In the type of house, as often happens.

If you have a cool, dark room available, you can safely use it as a pantry. Choose a perforated container so that air can pass through.

If your home is too hot, opt for the refrigerator instead , placing the carrots in the drawer dedicated to vegetables .

What not to store near carrots

Even the best carrots, those carefully chosen at the 0 km market directly from the farmer’s stall, can take on a bitter taste after a few days.

It is not a question (not always at least) of poor quality of the vegetable, but of the proximity of other fruit or vegetables that produce ethylene.

For juicy and sweet carrots, keep them away from tomatoes, potatoes and apples ! If your refrigerator does not allow a clear division, simply close them in a Fridge Bag !

How to freeze carrots

Obviously you can keep your recipes in the freezer as usual: whether it is steamed baby carrots or washers sautéed with butter, little changes.

If, on the other hand, you want to freeze carrots naturally, you will have to follow a few more steps.

You will need (in addition to carrots, of course):

a knife
a saucepan
a skimmer
a bowl
some ice
a colander
a baking dish (or a plate)
one or more food trays with lids or some Fridge Bags

The process takes patience, but it’s not difficult:

Peel the carrots, wash them and cut them into pieces (or slices, to taste).
Meanwhile, bring the water to a boil and prepare a bowl full of water and ice.
Pour the carrots into the boiling water and leave them for just a couple of minutes: after this, with a skimmer or a ladle, move them into the ice water.
After a few minutes, drain everything, then arrange the carrots in a baking dish or on a plate, avoiding that they overlap.
Leave in the freezer for a few hours and then move to the fridge bag or food trays.

This way you can keep them for about 8 months.
