Here is the recipe and some useful tips to best prepare the chicken spiedini, ideal for a perfect barbecue.

There is no barbecue without chicken spiedini. This fabulous main course can be prepared in a thousand different ways, but the most important ingredient is undoubtedly the meat, which must be of the highest quality and preferably lean. Also pay attention to cooking, which is why it is important to cut the meat into cubes of the same size so that each piece is cooked the same way.

For our recipe, we will use chicken, sausage, peppers and zucchini, which we will grill perfectly, but we will also see some variations of cooking: the one in the pan and the one in the oven.

The marinating of the chicken spiedini

The ultimate trick to make skewers even tastier and tastier is marinating. Before cooking, in fact, it is important to leave the meat to marinate for a few hours with oil, white wine, peppercorns, and aromatic herbs such as bay leaves, thyme, and parsley for example. After a few hours, just drain the morsels and make the skewers alternating the meat with the chosen vegetables.

And if you want to try a variant, use a dark beer, which will give your dish a very special aroma that will conquer all your guests.

How to cook chicken spiedini on the grill

  1. Start by cutting the chicken meat into cubes and then cut the sausage to the same size.
  2. Wash the vegetables well and cut the peppers and courgettes into slices into small squares.
  3. Make the skewers alternating the pieces of meat and vegetables.
  4. Place them in a baking dish and drizzle with olive oil and lemon juice, add rosemary, bay leaf, salt, and pepper, and leave to flavor for thirty minutes.
  5. Drain the marinade and cook on a hot grill, turning the skewers from time to time and sprinkling with the liquid from the marinade. For the times it will take approximately 20 minutes, but always check to avoid the risk of burning them or leaving them raw inside.
  6. The grilled skewers are ready, enjoy your meal!

A tip: remember to heat the grill well, preferably non-stick, before placing the meat on it. Enjoy your meal!

Meat skewers in the oven

  • Now let’s see how the skewers are cooked in the oven, soft and tasty in the same way!
  • To make them, arrange them on a baking sheet lined with parchment paper and then bake them at 200 ° C for about 20-25 minutes.
  • Remember to turn the skewers from time to time and sprinkle them with the marinade to prevent them from drying out too much in the oven.
  • Once ready, let them rest for a minute, then serve them still hot. Enjoy your meal!

How to cook chicken spiedini in a pan

  • To make skewers in a pan, instead, take a  large one and heat it with a drizzle of olive oil and a clove of garlic.
  • At this point, add the skewers and brown them side by side, turning them only once when each part has become beautifully colored and crunchy.
  • During cooking, add the marinating liquid and finally cover it with a lid for about ten minutes.

Some advice for chicken spiedini!

Now let’s see some gems for anyone who wants to make this dish flawless and 100% perfect. First of all, let’s start with the softness of the skewers: an infallible secret is to use a lid, and to remove it about 5 minutes from the end of cooking. This way the steam will make the meat tender and succulent!

There are those who use steel skewers, but usually, it is customary to use wooden ones. If you don’t want to risk charring them during cooking, soak them in cold water for at least 15 minutes. You will avoid any risk!

Of course, it would be better to enjoy the skewers as soon as they are ready and still hot, however, if you have any leftovers you can always keep them in the refrigerator for a maximum of 1 day in a container with an airtight lid. We do not recommend freezing.
