
The choice of tray for hot food can make a big difference to the end product’s cooking, sealing and transportation. Here are the basic points to check out when buying trays.

ToggleOvenable Trays are made from a variety of materials including aluminium, CPET plastic and board. Aluminum is great for roasted or baked foods as it is a good conductor of heat. CPET plastic is ideal for wet dishes and can withstand higher oven temperatures without warping.
Confirm the Maximum Oven Temperature: Always check the Maximum Recommended Use Temperature on packaging and compare it to your actual oven operating temperature, e.g. 180 – 230°C for aluminium, and 240°C + for CPET.
When choosing between shallow trays that are designed for flatbreads and pastries and deeper trays that are better for casseroles and pasta dishes, consider the amount of food you are planning to cook in the tray at any one time. Make sure that you are not to overfill the tray as this will lead to uneven cooking and potential for spillage.
For sealing food for retail or for delivery, use a matching lid or film seal for your chosen tray.
